Peppers red, yellow
Mushrooms
Red onion
Aubergine
Cherry tomatoes
Quinoa
PREPARATION
Pesto: Blend all of the ingredients with an electric hand blender.

- 1 garlic clove chopped finely
- 20g pine nuts
- 40g parmesan cheese finely grated
- 100ml olive oil
- Salt and pepper to taste
