Quinoa Sweet Potato Patties

Ingredients
  • 1 pack of 250g red and white quinoa

  • 200g baked sweet potato, skin removed

  • a handful of chopped parsley

  • 1 tsp smoked paprika

  • 1 tsp garlic granules

  • 1 tbsp olive oil

  • Salt and pepper to taste

PREPARATION

Preheat oven to 180˚C.

In a bowl mash the sweet potato with a fork, add paprika, garlic and parsley.
Method
Mix in the quinoa and season with salt and pepper. Make small round patties and place on a baking tray lined with baking parchment. Brush with olive oil on both sides.
Bake in an oven preheated for about 25 minutes until nice and crispy outside.
Let cool a little and serve hot or cold.

Perfect dipped in your favourite chilli sauce or a bowl of fresh guac!
