Quinoa Mushrooms Quisotto
Ingredients
400g of Pearl quinoa
300g of fresh mushrooms
Parsley
1 stock cube
Parmesan (flakes of nutritional yeast are a great vegan substitute)
Olive oil
1 onion
Salt
Pepper
PREPARATION
Boil the quinoa for 12 minutes then drain.
In the meantime, chop the mushrooms and fry.
Brown the onion.
Add the quinoa with 1 pint of stock.
Once cooked add the mushrooms and parmesan.
Add the parsley.
