Mexican Quinoa Salad
Ingredients
1 pack Spicy Mexican Quinoa Express
Red Kidney beans
Sour Cream
Sliced Iceberg Lettuce
Sliced Cherry Tomatoes
Diced Red Onion
Fresh Coriander (optional)
Hot Sauce (to taste)
PREPARATION
Microwave your quinoa for 30 seconds for a warm salad, or simply empty the contents into your bowl. Drain your kidney beans and mix in with your quinoa. Top with some shredded iceberg lettuce.
Thinly dice your red onion and tomatoes and mix together. Add this to your bowl and dollop some sour cream on top.
Sprinkle coriander on top. Drizzle with lime juice and hot sauce... if you fancy!
Enjoy.
