Blackberry, Yoghurt & Quinoa Layered Breakfast Bars
Ingredients
200g Quinola Quinoa
210g Plain Flour
100g Rolled Oats
1/2 tsp Baking Powder
150ml Little Seed Rapeseed Oil
3 tbsp Honey
500g Greek Yoghurt
1 tsp Vanilla Extract
60g Sugar
2 tbsp Corn Flour
150g Blackberries
PREPARATION
Pre heat oven at 180 degrees.
Method
First in a mixing bowl combine flour, oats, baking powder, vanilla extract, Rapeseed Oil, honey and Quinoa, then mix with a spatula.
Line a 20cm squared baking tray with baking parchment, then spoon out the Quinoa mix into the tray.
Next combine the yogurt and sugar and spoon over evenly the Quinoa mix.
Top the yogurt mix with the blackberries, then bake in the oven for 40mins.
Once cooked, allow to cool, then place in the fridge to cool until fully set (usually a couple of hours).
Cut into ten bar sized pieces and enjoy!
